Add the wall areas, the perimeter multiplied by the ceiling height, add the ceiling area, subtract large openings, and divide by the sheet size you buy, then add your allowance. The count of sheets, screws, compound and tape all follow from that one area figure.
Should the material estimate include fixings and consumables? Yes, by count or weight. Screws, compound, tape, adhesive, shims and blades are small lines that are forgotten on the estimate and bought at full price in a panic on site, which is the most expensive way to buy anything.
Can one estimator handle every material? It can handle the arithmetic for most of them, because nearly everything is an area, a length, a volume or a count.
